Existing rating systems, the researchers note, have largely been developed in wealthier countries and do not adequately capture a food's richness in vitamins, minerals, and high-quality protein, nor the bioavailability of various nutrients. This can lead to an underestimation of the nutritional shortcomings of foods low in calories or sugar.

The NVS is based on seven components: vitamins, minerals, protein, omega-3, fiber, caloric density, and nutritional ratios involving sodium versus potassium and saturated versus unsaturated fat. Ultra-processed foods receive a 25% penalty in their scores. The system was tested on 289 foods from diverse regions, including Indonesia, Bangladesh, Kenya, Nigeria, and the United States, broadening its applicability for various populations.

At the group level, dark green leafy vegetables and organ meats received the highest scores. On an individual basis, foods like dried okra, dried fish, spinach, and organ meats led the list, while beverages and ultra-processed products were found at the bottom.

The study also revealed that not all fruits and vegetables are nutritionally equivalent; guava scored higher than watermelon and spinach outperformed eggplant. This finding stresses the importance of selecting nutrient-dense options when aiming for better health.

Although the NVS offers a more nuanced perspective compared to systems like Nutri-Score, researchers caution that it should not be simply viewed as a front-of-package health label. It serves as a research and policy tool rather than a consumer guide.

Limitations of the study include the need for further validation and reliance on American nutritional databases, which may not fully represent local variations. The NVS does not account for all factors affecting food quality, such as polyphenols or certain bioactive components.

The key takeaway from this study is that nutrition extends beyond mere calorie counts and broad food categories. To improve dietary quality, individuals should focus on consuming unprocessed, nutrient-dense foods, while being cautious of ultra-processed snacks and beverages that may appear healthier than they are.
