The analysis indicated that the selected recipes showed consistent deficiencies in protein and fat intake, as well as significant shortfalls of vitamins B12, D, and calcium. Most recipes provided less than 10% of the daily recommended value for these nutrients. Other key micronutrients, including iron, zinc, iodine, and selenium, were also often low. While the recipes contained high levels of fiber and unsaturated fats, they did not collectively meet adequate nutritional standards. These findings suggest that those adhering to a raw vegan diet should engage in careful dietary planning and consider supplementation to avoid long-term deficiencies.
Eight raw vegan recipes were identified from the first page of Google search results between January 20, 2025, and January 31, 2025. Recipes were selected based on specific criteria, such as the inclusion of complete ingredient lists and instructions confirming they did not involve cooking or heating. Each recipe was chosen to reflect a range of culinary traditions to mitigate biases related to specific food groups.
Nutritional analysis revealed alarming deficiencies in key nutrients. Vitamin B12, typically found in animal products, was missing from all recipes analyzed. Vitamin D levels were also insufficient, with only one recipe providing a noteworthy amount. Calcium was critically low across all recipes, limiting adequate intake necessary for bone health. Iron and zinc were similarly deficient, primarily due to the lower bioavailability of these minerals from plant sources compared to animal foods.
The results point to a significant lack of protein in these recipes. For example, the only recipe to contain appreciable protein was the Zucchini Noodles with Peanut Sauce. Overall, these findings align with existing literature highlighting nutrient gaps in raw vegan and plant-based diets. Sustained nutrient inadequacies can lead to health issues, including osteoporosis, neuropathy from B12 deficiency, and impairments in cognitive function due to low iron and zinc levels.
While raw vegan diets promote high fiber intake and consumption of unprocessed foods, they lack diversity in nutrient sources, which may lead to chronic deficiencies. To mitigate these health risks, individuals adhering to a raw vegan approach should consider integrating diverse raw foods, fortified products, and supplements to cover nutritional insufficiencies effectively. Regular monitoring of dietary intake and working with healthcare professionals is recommended to maintain long-term health.
